Introduction

Ingredients

    4 slices bread (I used raisin walnut, but anything you like in french toast will work)
    4 eggs
    1/4 C raspberries, fresh is best
    1/4 C blueberries, fresh is best
    1/4 tsp orange extract
    1/4 tsp vanilla extract
    1/4 C milk

Directions

In a 10x10 baking dish, add your fruit, milk, extracts and eggs. With a fork mix well, breaking yolks and "squishing" fruit into the mix (poke the blueberries with the fork before squishing or they will squirt juice all over). When this is well mixed set aside. Cut the bread into cubes 1/2-3/4". Add the bread cubes to the mix in the baking dish; spoon the mix over the bread and mix it gently until all pieces are coated then spread evenly in the pan and eave set a minute or two to absorb the mix. Turn oven on 350 and bake for 25-30 minutes. Remove with a spatula, cut into four sections and serve. While this makes 4 servings (ie: 1 egg/1 slice of bread per serving) my family likes 2 servings.

You can double the recipe to make 8 servings if your pan is deep enough, or you can use a larger pan. Layering it deeper will add about 5 minutes to your baking time.
