Introduction
Mashed root vegetables with onions, garlic and leeks. Ingredients can be substituted depending on what you have on hand. The beets give this a vibrant color. Ingredients

8-10 small red potatos
1 large rutabaga
2 medium beets
1 large onion, chopped
1/2 cup leeks (white portion sliced thin)
12 cup beet greens
6 tablespoon chopped garlic
1 cup brussels sprouts cut in half
1/2 cup beet greens
2 tablespons peanut
3 oz cheddar cheese (grated or sliced)
Directions
Boil the red potatos. Cut and place in mixer. Boil the rutabaga. Cut and place in mixer. Boil the beets. Cut and place in the mixer. Blend the three ingreients and set to the side.
Saute all of the remaing ingredients with the excepton of the cheese. Cook until softened and tender. Add to the potato mixture and mix throughly.
Cheddar cheese can be grated and added to potato mixture or sliced and placed on top after the mixture has been placed in a baking dish.
Bake at 350 for 20 minutes until heated through. Enjoy!
