Ingredients

    1 can red kidney beans
    1 can coconut milk
    ½ Lb. beef cut into chunks or strips (stew meat works well)
    1 tsp. Thyme

Directions

Season the meat however you like, brown the meat. Add kidney beans (do not drain). Stir. Add coconut milk. Throw in green onions whole. Cover the pot and allow to boil. Uncover, let simmer on low heat. Stir occasionally. Simmer for 20-30 minutes or until consistency of gravy. Pull out onion stalks.

Spinner Dumplings:
Work a little water into the flour/salt mixture until dough forms. Roll into small dumplings. Add to Stew Pea mixture to cook.

Serve over white rice and enjoy!

    I am soooo excited to see this here!! This is one of my favorite dishes! The nutrition info is better than I expected. I agree with Toniablake, you have to add the spinners/wrigglers to make it complete :) - 4/1/11

    This is almost my own recipe. I am very happy to see it here. The recipe list does not include the spinners/dumplings though so I was wondering if all the ingredients were a part of the nutrition analysis. It looks much better than I dreaded. Thank goodness, since it's one of my favorite meals. - 9/15/09

    I would leave out the coconut milk.....and instead of canned kidney I would go from scratch..

    This one is definetly a time saver though and still is delicious
