    1 small onion, chopped
    5 small carrots, diced
    2 patty pan squash, cubed
    Trader Joe's Spelt with Green and Red peppers (1 box)
    Trader Joe's Soy Ginger Broth (1 carton)
    60 cherry tomatoes
    4 tbspns wasabi ginger vinaigrette


Cook Trader Joe's Spelt with Green and Red peppers with a quart of Trader Joe's Soy Ginger Broth till cooked.

Saute onions, carrots, squash in a non stick pan with some water till crisp tender. Mix with vinaigrette

Combine the crisp tender veggies and the cooked spelt. Divide into 6 servings. Garnish with 10 cherry tomatoes each.
