Introduction

Number of Servings: 8

Ingredients

    1 Tbsp Butter
    3 large clove garlic, minced
    2 medium carrots
    4 Cups Low Sodium Chicken Broth
    4-1/2 lbs -5 lbs Fresh peeled and diced ripe tomatoes
    OR
    8 very Large Tomatoes
    1 small Can of Tomato Paste
    4 Tbsp Chopped Basel
    Salt and Pepper to taste

Directions

Blanch Tomatoes in Boiling water until skin is cracked. Transfer Tomatoes to cold water bath and remove skins and core.
Coarsely chop 2-3 tomatoes.
Puree the remaining tomatoes with 4 Tbsp Basil

In heavy sauce pan, melt butter, stir in garlic, carrot and onion.
Cook over medium-low heat until onion is tender
Add broth, cover and simmer for 20 minutes.
Pour onion, carrot, celery, broth mixture into a blender and puree.
Return to Pot and stir in tomatoes and tomato paste and simmer for 10 minutes.
Just before serving, add salt and pepper to taste.
Garnish with more chopped Basil.
