Introduction

This simple to make receipe is a great way to get in those veggies. They can be made ahead and warmed in the micro or toaster oven. This simple to make receipe is a great way to get in those veggies. They can be made ahead and warmed in the micro or toaster oven.

Ingredients

    1/2 c shredded carrots
    1 c shredded zucchini
    1 12 oz can whole kernal corn
    1 egg
    3/4 c flour
    1 tsp baking powder
    1/4 c cornmeal
    1/2 c milk

    Note: any vegetables can be used


Directions

Combine all ingrediants and then fry in a skillet over medium heat using vegetable oil.

Drop into the skillet in small patches - cooks very similar to a pancake.

    O.K.
    Overall, fairly easy to make. However, needed some spices for flavor (too bland as written). Also, would not make again unless I can figure out how to bake instead of fry. - 10/2/11
