Introduction

Number of Servings: 15

Ingredients

    2 lbs of chicken breast (boneless and skinlesss) diced in small pieces
    2 cups of brown grain rice
    1 can of rotel
    1 can of tomato sauce 8oz
    3 cups of frozen corn
    1 cup of fresh spinach
    1 tbsp of cilantro and garlic minced
    2 tbsps of salt
    Pepper to taste
    1 tsp. of chili powder
    8 cups of water

Directions

throw all together in a large pot with 8 cups of water...adding water as needed and cook on low to medium. Cook till rice is tender. Serve over tortilla chips and montery jack cheese!
