Ingredients

    Whole Wheat flour 2 cups
    Apple juice concentrate unsweetened 1 cup
    cinnamon, ground 1 TBSP
    Baking powder 2 tsp
    Baking soda 1/2 tsp
    Salt 1 tsp
    Carrots, raw, grated 2 cups
    apples, fresh, 1 cup
    Egg, 1 whole
    Egg, 2 whites
    Apple butter 1/2 cup
    Vegetable or Canola oil 1/4 cup
    Vanilla Extract 1 TBSP
    Walnuts 1 ounce, chopped
    Wheat Germ 2 TBSP

Directions

1. Heat oven to 350 degrees. Fill muffin pans with 18 muffin cups or use silicone muffin pans.
2. Whip together eggs, whites, apple butter, oil and vanilla.
3. Stir together dry ingredients.
4. Add Carrots and apples.
5. Mix dry and moist mixtures together until moist.
6. Place in muffin cups.
7 .Bake for 15 to 20 minutes
8. Cool and server.
