Number of Servings: 20

Ingredients

    Lentils, 3 cup
    Onions, raw, 1 small
    Green Peppers (bell peppers), 1 cup, chopped
    Bay Leaf, 1 leaf
    Organic Low Sodium Chicken Stock, 4 cups
    Water, 2 cups
    1 can diced tomatoes-italian flavored
    2 cups diced ham
    7 small red potato diced
    1 cup dry barley
    Seasonings: Salt, Pepper, Parsley, Cumin

Directions

Chop onion and bell pepper
Rinse Lentils
Combine veggies and lentils in crock pot
Add water, chick stock, tomatos, and bay leaf
Season to taste
Simmer on low in crock pot for 6-8 hours

Makes approx 12-1 cup servings

    Very Good
    This was excellent ...i omitted the potato and used turkey smoked sausage instead of ham. I added 4 cups of additional water as it was cooking to thin it out more. - 2/20/11

    As for the bitterness, you may add a few dashes of red wine vinegar to your serving bowl or more to the crock pot at the end of cooking. This is actually from a Greek lentil soup recipe. - 1/30/11
