Ingredients

    Zucchini, 3 cup, sliced
    Chopped Tomatoes, 1 cup
    MorningStar Farms Grillers Recipe Crumbles, 1 1/3 Cup
    Soy-Sation Shredded 3-Cheese Blend 6 oz
    Tomato Sauce, 1 cup
    100% Extra Virgin Olive Oil Cooking Spray, 2 serving
    Basil, 4 tbsp
    Oregano, ground, 4 tbsp
    Onion powder, 2 tbsp
    Hain Sea Salt, 1 tsp

Directions

Spray large ceramic casserole bowl with olive oil spray
Line bottom of bowl with a layer of zucchini
Sprinkle with about 1/3 of the chopped tomatoes
Sprinkle with about 1/3 of the Grillers Crumbles
Sprinkle with about 1/4 of the Soy Sation Cheese
Sprinkle with about 1/3 of each of the herbs and spices
Repeat for three layers
Pour tomato sauce over casserole
Top with remaining Soy Sation Cheese

Bake for about 30 minutes, or until Zucchini is tender and "cheese" is melted.
