Ingredients

    1/2 plum tomato sliced
    3-4 artichoke hearts sliced in half
    2 thick slices red onion chopped fine
    1 cup fresh spinach washed and dried
    1 pkg trader joe's whole wheat pizza dough , halved (save the rest for something else)
    nonstick cooking spray

Directions

Chop onion, slice tomato, wash and dry spinach, and slice artichokes in half . Lay out dough (amount will vary on preferences I actually use about 4-5 oz of dough). Layer spinach, tomato, and artichokes grate parmesan on top. At this point you can fold and make into a calzone of sorts or leave flat. Put it on a nonstick sprayed cookie sheet (if you use foil it will save cleanup time). Sprinkle top of calzone with reserved onion and parm if you choose, put in a 400 degree oven for 15 - 20 minutes, check every five minutes as ovens tend to vary. Enjoy!
