Ingredients

    2 acorn squash, halved and seeded
    1/2 cup dry quinoa
    2 small carrots, chopped
    1/2 small onion
    1-1/2 small ribs of celery, chopped
    3/4 cup orange juice
    1 cup of water

Directions

Bake the squash (either microwave method or oven) until tender. Sauté the carrots, onion and celery in a pan coated with non-stick spray. Once tender, add quinoa, juice and water. Bring to a boil. Reduce to medium heat, cover and let simmer until the liquid is absorbed (about 15 to 20 minutes).

Once cooked, divide quinoa mixture evenly between squash halves and return to oven at 350 for about 10 minutes.

*Not calculated in nutritional info, but I added a bit of low fat cheddar and mozzarella cheese to have on a half squash for lunch.
