Introduction

Molokhia (Melokiyah, etc.) is a traditional dish in Egypt. Some people believe it originated among Egyptians during the time of the Pharaohs. Others believe that it was first prepared by ancient Jews (the plant is also known as Jew's mallow). The leaves of this plant have a mucilaginous (thickening) quality that helps thicken the soup. The ingredient is rare if at all available in the U.S. fresh but it can be found frozen in Middle Eastern grocery stores. This is a delicious soup that can be your meal starter, a main dish, served with a side of Pita bread, or poured over white rice. Molokhia (Melokiyah, etc.) is a traditional dish in Egypt. Ingredients

    - 1 frozen Minced Molokhia Pack (400gm). Do NOT get the frozen full leave equivalent.
    - 2 cups of hot Chicken broth (fresh broth can be used as this dish goes well with boiled (and then optionally pan fried) chicken.
    - Half a stick of Butter
    - 5 cloves of garlic, minced
    - 1 tbsp of ground coriander seed.

== Makes 6 half cup servings ==

- Thaw the Molokhia package at room temperature at least 2 hours prior to cooking.
- Mince or press garlic.
- In a 4 quart Sauce pan, melt butter, and fry garlic until you smell its aroma and its color turns golden.
- Add Coriander, and cook for an additional minute.
- Add the 2 cups of hot broth, bring to a boil, then reduce heat to Medium.
- Add the partially thawed Molokhia.
- Keep stirring till completely mixed with the soup.
- Continue stirring over medium heat, making sure you never reach the boiling point for approx. 15 minutes, until the soup thickens.
- When soup is thick and really hot, but just before boiling, turn off the heat.
- Serve immediately.
- Molokhia soup is often served over boiled Rice and sometimes with boiled (then pan fried) chicken.
- Add salt to taste, if needed.
- Enjoy!
