Introduction

I love Spanish chorizo! It packs a lot of flavor, and it is a bit spicy, which I like. I also use Jalapenos instead of Green pepper (without the seeds) to give the omelette an extra spicy kick. Yum! Ingredients

    - 2 large eggs
    - About half a cup Egg White substitute
    - 2 tbsp minced parsley
    - 1/2 oz Spanish Chorizo diced and very lightly fried
    - A small Jalapeno pepper, seeded and diced (You can use about 3 tbsp Bell pepper instead)
    - 2 green onions sliced to small pieces
    - About half of a tomato diced
    - 2 tbsp parmesan cheese.
    - 2 tbsp of oil

== Makes 2 servings each one half of the Omelette ==

- In a deep bowl, beat Eggs, Eggs substitute, and Parsley well. This recipe does not require any seasoning, since the Chorizo, pepper, and parmesan will do the trick. But you are welcomed to add a pich of salt and pepper to the eggs.

- For the Omelette filling, in a 10'' non-stick Omelette pan use 1 tbsp of the oil to fry the Jalapenos, chorizo, tomato, and green pepper. 1 minute.

- Remove the filling and put the additional oil in the pan.

- Pour in the Egg mixture, and Fry until the top is close to setting.

- Add all the filling in the middle of 1/2 of the omelette, then sprinkle with the parmesan cheese.

- Using a spatula, carefully fold the other half of the omelette to cover the filling.

- Turn the Omelette over to fry the other side. (It might be easier at this point to cut it in half before turning)
