Ingredients

    1 Leek
    4 C peeled Pumpkin, cut into 1" cubes
    2 C diced, cooked turkey breast
    4 Carrots, diced
    4 Parsnips, diced
    1 large sweet potato, peeled and diced
    5 stalks Celery, diced
    10 C Vegetable Broth
    2 C dried Red Lentils
    1 T Ground Nutmeg
    1 Tsp Cinnamon
    1 T Poultry Seasoning
    1 C roasted Pumpkin Seeds

Directions

Put all ingredients (except pumpkin seeds) into large soup pan over medium heat.

Mix well, bring to gentle boil.

Cover, reduce heat and simmer for 45 minutes.

Sprinkle 1/8+ C pumpkin seeds over each serving of soup just prior to serving.
