Ingredients

    Olive Oil, 1 tbsp
    Onions, raw, 1 medium diced
    Garlic, 2 clove minced
    Spinach, frozen, 1 package (10 oz) thawed and drained
    Neufchatel Cheese, 8 oz
    Sour Cream, reduced fat, 1/2 cup
    Old El Paso Enchilada Sauce, 10 oz can
    Cheddar Cheese, 1 cup, shredded
    Corn Tortillas, 12 tortilla, medium (approx 6" dia)

Directions

Saute onion and garlic in olive oil until translucent. Add in spinach, cream cheese, and sour cream. Heat through until cheese is melted. In a dry skillet over medium heat, warm tortillas until flexible. Fill each evenly, roll, and place seam side down in baking dish. Cover with enchilada sauce, and sprinkle with cheddar. Bake in preheated oven at 375 for 15-25 minutes.
