Introduction

Like anything that I cook, I really don't measure. I apologize in advance, but I like to freestyle. This was my best attempt at remembering what I put in this dish. The measurement for the seasonings are NOT dead on. All I can say is that it was yummy and I am quite confident that you can tweak this to make it all yours. I don't like to use fat free cheese to compromise taste and add sodium, but it's all up to you.

Ingredients

    *- Fage 0%
    *Best of the Egg--Egg Substitute
    *Onion powder
    Paprika, 1 tsp
    Garlic, 1 tsp
    *Splenda, 1 tsp
    *Bread Crumbs
    Pumpkin, canned
    Gouda Cheese
    Brummel & Brown Spread
    Pepper, black
    Salt
    *Kraft 2% Sharp Cheddar Cheese
    Whole Wheat Medium Shells
    Ricotta Cheese, part skim milk
    *Cheese, Havarti Light

Directions

Pre-heat oven 375 degrees.

Cook 1 box of Whole Pasta until tender, but not exactly aldente.

In a medium saucepan on med. low heat , create a rue, including all cheese, (except 1 oz. of cheese), seasoning, butter, pumpkin and yogurt.

Stir rue until all cheese is almost melted.

Spray rectangular pyrex pan with butter spray (PAM) and quickly, pour rue over pasta and toss until all pasta is covered.

Pour egg substitute over ingredients and Sprinkle cheese, bread crumbs and paprika on top and spray with a little more Pam.

Cook for 40-45 minutes, making sure top is crisp and brown.
