Ingredients
-
2 C instant Quaker Oats (dry)
1/4 C unsalted butter
2/3 C packed brown sugar
2 1/2 C boiling water
2 packets Fleishman's Rapid Rise Yeast
1/2 C warm water
6 C flour
Directions
Mix oats, butter, brown sugar, and boiling water in a large mixing bowl. In a separate bowl, mix warm water with the yeast and stir until dissolved. Let the yeast water sit for 5 minutes to activate. Afterwards, mix into the oat mixture and add 2 cups of the flour. Knead until mixed through. Keep adding and kneading 2 cups of flour at a time until all 6 cups have been added. You may need to remove from bowl onto a smooth surface to really get into it :)
After the dough is formed, lightly butter/grease it (to prevent from cracking/drying) and place in large bowl to let rise (approximate 30 minutes.
After the dough has had time to rise and double size, punch the dough down and knead again on a flat surface. Separate the dough into 24 balls. Place on cookie sheet and in the center rack of the oven (400 degrees) and bake for 15-20 minutes or until golden brown.
