Introduction

Ingredients

    Pork Tenderloin, 16 oz (remove)
    Beans, black, 2 cup (remove)
    Yellow Sweet Corn, Canned, 1 can (12 oz) yields (remove)
    *Diced Tomatoes & Green Chiles, RO*TEL, 1.5 cup Chicken Broth or Bouillon, 1 cup (8 fl oz) (
    Tomato Paste, .5 can (6 oz)
    *Cumin seed, 1 tbsp
    Onions, raw, 1 medium (2-1/2" dia)
    Garlic, 3 cloves
    Yellow Peppers (bell peppers), 1 pepper, large (3-3/4" long, 3" dia)

Directions

Brown Pork Tenderloin in olive oil
Chop onion, garlic
Rinse beans to get as much of the salt off
Add all ingredients to crock pot
cook on high 5-6 hour or 7-8 on low
After cooking shred pork Tenderloin, best to use two forks for shredding.
Add salt and pepper and tabasco sauce to taste.
Makes 8 generous cups
