Ingredients

• 2 pkg. frozen chopped broccoli
• 1/4 c onion, chopped
• 1/4 stick butter
• 8 Laughing Cow Garlic and Herb Cheese wedges
• 1 can Healthy Request Cream of Mushroom Soup
• 1/8 tsp Cayenne pepper
• 1/4 tsp Salt
• 1/4 c Italian Bread Crumbs
Directions
1. Cook broccoli until overdone - about 30 minutes.
2. Sauté onions in butter about 15 minutes.
3. Add soup.
4. Add cheese and blend in until melted.
5. Add seasonings and broccoli, stirring until well mixed.
*Add broccoli slowly until reaching preferred consistency.
6. If serving as dip, enjoy now! If serving as a casserole, put into 13 x 9 greased casserole dish.
7. Sprinkle bread crumbs on top.
8. Bake in oven at 325 degrees until bubbly, about 25 minutes.
Makes approximately 12 (1/2 c) servings.
**Add less broccoli for a dip texture that can be served with chips or cracker.
**Add more broccoli for a thicker texture that can be served as a stand alone casserole

Why not just saute the onions in a little olive oil or Pam rather than the butter? Doesn't look like it would affect the flavor. Good idea to use as a dip - have never seen similar casseroles used that way! - 11/16/10

Thank you for checking out my recipe! I will try the onions in some olive oil one time...I have just been doing it like my Mom use to :-)
