Introduction
Super healthy, really easy flaxmeal-based muffin that bakes in a minute. Got it from the Atkins online forum but it's a balanced, filling, start to anyone's morning with Omega 3, lots of fiber, whole grain carbs, and protein. I have with cottage cheese and cucumber. Ingredients

0.25 cup - Flaxseed meal
2 tsp - Splenda
0.25 tsp - Baking Powder
1 - large egg
0.25 tsp - vanilla essence (some people use cinnamon but i don't like cinnamon, you could probably use other things too)
1 tsp - Butter (cut into small pieces)
Directions
In a mug
1) Mix all dry ingredients
2) Add egg, vanilla essence, chopped up butter
3) Mix with a fork
4) Leave for 1 minute (don't have to but i think it lets the baking powder start to kick in)
5) Microwave on high for 1 minute
Muffin will fall out of mug and you can cut on a plate and enjoy with topping of your choice. I have low-fat cottage cheese and cucumber as I'm not on Atkins anymore.
