Meatballs to eat alone, on a sub sandwich, or in sauce. Meatballs to eat alone, on a sub sandwich, or in sauce.

    1 1/2 pounds extra lean ground beef
    2 1/2 pounds sweet Italian sausage
    1/2 onion, finely chopped
    1/2 bell bepper, finely chopped
    6 cloves garlic, finely chopped
    2 eggs
    1 cup dried bread crumbs
    1/2 cup grated Parmesan cheese
    1/2 cup chicken or beef stock


Finely chop onion, bell pepper and garlic. Sautee in nonstick skillet for 5 minutes or until starting to soften. Crumble meat into bowl. Add remaining ingredients and mix well. Form into 96 one-inch balls. Bake in a 400 degree oven for 25 minutes. Use as desired.
