Introduction
This is not a light dish by any means, but it is delicious for a holiday treat. Dad makes this stuffing for Christmas and Thanksgiving every year. Ingredients

30mL (2T)butter
250g (9oz) Chicken liver (or giblets)
1kg (18oz) Pork sausage meat
175mL (3/4cup) bread crumbs
4 Large eggs
Directions
1. Melt butter in a large pan over medium high heat
2. Brown the liver in the butter
3. Add the sausage meat to the pan. Break the sausage into chunks resembling hash as you cook it.
4. Continue cooking until the meat is done, about 15 minutes
5. Take the pan off the stove and drain fat.
6. Let cool about 10 minutes or until cool enough to handle.
7. Place the pork in a large bowl.
8. Add the breadcrumbs to the bowl and mix thoroughly
9. Add the eggs to the bowl and mix thoroughly
10. Stuff mixture into turkey cavity and cook turkey as directed.
Total cooking time depends on the size of the turkey
Makes 8 to 10 servings.
