Number of Servings: 3

Ingredients

    6 flour tortillas (about 6 inch across)
    1 cup shredded Montery Jack Cheese
    3/4 cup cooked chicken
    3/4 teaspoon ground cumin
    1/2 cup salsa
    no fat, non-stick cooking spray (or no fat no cal cooking butter)

    Optional (additional cals.) guacamole or sour cream

Directions

1. Heat tortillas to make them soft and pliable
2. in a small bowl, mix cheese, chicke and cumin.
3. Put 1/4 cup of chicken mixture on each tortilla and then cover with 1 tablespoon of salsa
4. Roll up tightly (secure with toothpicks if necessary)
5. Spray rolled up tortillas with non-stick cooking spray
6. Place rolled up tortillas on a skillet over medium heat (turning occasionally) until chicken and cheese is melted and tortillas are toasty brown. (about 4-6 minutes)

Serving size: 2 filled tortillas
Yield: 3 servings
