Introduction

I cook this in the crockpot and the chicken just falls apart which is easily to pull or chop into small pieces after work. I serve it with a half of cup of brown rice which is not figured into calories. Garnish with cilantro and serve with a salad. Ingredients

    4 large boneless chicken breasts - roughly 1 lb
    2 cans of great northern beans or any white bean
    1 pkg of McCormicks White Chicken Chili seasoning
    1 cup of water, although I added about 2 cups since we
    don't like it quite so spicy
    Cilantro for garnish

Directions

I put the water and chicken breasts just raw into the crock pot and empty in the beans and the seasoning mix. I mix it all together and set it for 9 hours and off to work. When I come home, I shred or pull the chicken and put it back into the pot. While I am doing this I make some brown rice or couscous and serve the chili over that. I garnish with some cilantro. If you like it spicier add some cayenne red pepper.
