Ingredients

    Chicken thigh 2 thigh, bone and skin removed
    Chicken breast, no skin, 2 brest, bone and skin removed
    Butter, 1 tbsp
    Garlic, 2 cloves
    Celery, raw, 2 stalk, small, 5" long
    Onion, cut into wedges
    Soy Sauce, 3 tbsp
    Cornstarch, 1 tbsp
    cold water, .25 cup


Directions

Place chicken peice in a covered casserole and microwave high 15 minutes. Drain juices and reserve for sauce. Set Chicken aside to cool. In small batter bowl, place butter, garlic, mushrooms, celery, and onion. microwave high 3 to 4 minutes or until vegtables are tender.Add chicken juice and soya sauce to the vegtables. Mix cornstarch with cold water and blend vegetables. microwave high 1 to 2 minutes, or until slightly thickened. remove skin and bone chicken. Cut into bit-sizeed pieces. Combine with sauce. pour into a serving casserole, ( the one you cooked the chicken in), and heat on medium high covered, 2 to 3 minutes or until heated though. Just before serving, garnish with toasted almonds and chopped green onions. Serves 4.
