Ingredients

    1 1/2 C. Whole Wheat Flour
    1/2 C. Natural Sugar
    1/2 C. Yellow Corn Meal
    1 tbsp Baking Powder
    1 1/4 C. Unsweetened Soy Milk
    3 tbsp Ground Flax Seed
    1/3 C. Vegetable Oil
    3 tbsp Smart Balance Light Buttery Spread
    6 Smart Dog veggie links

    Preheat oven to 350. Grease or paper-line muffin pan (I use a six-muffin pan).

    Mix in small bowl, 3 tbsp flax seed with equal parts water. Let sit. Combine flour, sugar, corn meal, and baking powder in medium bowl. Combine soy milk, flax seed mixture, vegetable oil, and butter in small bowl; mix well. Add to flour mixture; stir just until blended.

    Fill the bottom of the muffin cup with batter, then add a soy dog (cut in half, or in pieces). Fill the rest of the cup with batter. Continue until all cups are finished, then bake for 18-20 minutes or until wooden picked inserted in center comes out clean. Cool for 5 minutes. Serve warm.
