Ingredients

    Olive Oil - 1 Tbsp
    Onions - 1/2 cup, chopped
    Garlic - 1 clove, minced
    Diced Tomatoes - 1 can (15oz)
    Vegetable Broth - 1 1/2 cups
    Tomato Paste - 1 Tbsp
    Salt, Pepper & Italian Seasoning - to taste
    Kidney Beans - 1 can (15oz), rinsed and drained
    Black Beans - 1 can (15oz), rinsed and drained
    Frozen Vegetables - 16 oz bag

Directions

1. Heat oil in medium saucepan over medium-high heat. Saute onion until just soft, add garlic and cook for 30 seconds stirring constantly.
2. Add can of diced tomatoes, tomato paste, salt, pepper, Italian seasoning and vegetable broth and combine well.
3. Add beans and frozen vegetables, bring to a boil, allow to simmer for 30-35 minutes.
