Introduction

Ingredients

    Chicken Thighs
    Vegetable Oil
    Onion
    Turmeric
    Israeli Couscous
    Vegetable Oil
    Water
    Coriander Seed
    Cumin Seed

Directions

Heat the oil over medium heat and then add the onion and saute until soft. Place the chicken thighs (make sure they are patted dry) onto the onion and cook until browned on one side (about 5 to 7 minutes). Sprinkle the exposed side of the chicken with the turmeric and then flip the chicken and brown the other side (about 5 to 7 minutes). Stir in the dry couscous--it should have a really pretty yellow color from the turmeric. Once the couscous is stirred in, add the vegetable broth and water. Bring everything to a simmer and simmer for 10 minutes. Stir in the coriander seed and cumin seed and simmer for another ten minutes. Serve with roasted cauliflower seasoned with turmeric.
