Tired of the same old breakfast? I was! Since I'm not a big fan of omelets because of the texture, but love all that goes into one, I cook this and it's delicious. I hope you like it as well. Ingredients

    onion, mushrooms, olive oil, salt, pepper, garlic, raw spinach, tomato, and eggs

Directions

Begin by chopping the onion, mushrooms, tomato, and spinach for easier cooking. Heat a small skillet with olive oil over medium high heat. Add the chopped onion, mushrooms, salt, pepper and garlic. Saute until vegetables are tender. Take the two eggs and whisk them in a small bowl until they are combined. Add the eggs to the vegetables and stir until all ingredients are joined together and the eggs are cooked. This won't take long. Add the tomatoes and then the spinach and continue cooking until they are warm. Plate and Enjoy!
