Veganized version of baked & cheese. Veganized version of baked & cheese.
Number of Servings: 4


    8 ounces macaroni
    1-1/2 cups milk alternative (I used almond milk but you can use your milk of choice)
    3/4 teaspoon salt
    1 dash hot pepper sauce
    1-1/2 tablespoons Earth Balance (or other non-margarine)
    3-1/2 cups Daiya Cheddar cheese, divided (or other non-cheese)
    1/2 cup bread crumbs (Recommended: Panko)
    1/2 teaspoon paprika


1. Preheat oven to 350 degrees F (175 degrees C).

2. Grease a 2-quart casserole dish.

3. Bring a large pot of lightly salted water to a boil. Add macaroni and cook for 8 to 10 minutes or until al dente; drain.

4. Heat the almond milk in a small saucepan. Stir in salt, and hot sauce. Set aside.

5. Stir 1-1/2 tablespoons Earth Balance and 3 cups cheese into the drained macaroni.

6. Pour the hot milk mixture over the Daiya cheese and macaroni.

7. Transfer to prepared baking dish.

8. Sprinkle remaining 1/2 cup cheddar on top.

9. Combine the bread crumbs with the melted Earth Balance, and spread over the top.

10. Sprinkle with paprika.

11. Bake in preheated oven for 30 minutes, and then place under the broiler for 1 to 2 minutes.
