Ingredients

    1 cup flour
    1 3/4 tsp baking powder
    1/2 tsp salt
    1 Tbsp Baking Spenda (or sugar)
    2 large ripe bananas
    3/4 cup soy milk (or regular milk)
    1 cup Egg Beaters (or 2 large eggs)
    2 tsp canola oil (or any vegetable oil)
    1/2 cup chopped pecans (optional)

Directions

In large mixing bowl, mix together flour, baking powder, salt & sugar. Set aside.

In food processor with metal blade, puree bananas till a liquid consistency. Transfer to a bowl. Add milk, eggs and oil. Beat at low speed with mixer. for 30 seconds. Add dry ingredients, mix till batter is consistent- just a few seconds. Add pecans.

Spray electric griddle with cooking spray. Heat to 300 degrees. Pour pancakes till about 4". When batter has a good layer of bubbles, turn. Cook 2 more minutes. Serve warm.

    I tried these pancakes, they are very good. I did not have skim milk so I decided to use almond milk that I had in the refrigerator. - 6/3/15
