Introduction

Ingredients

    2 (32 oz.) cartons of Beef Broth 50% less sodium, 100% fat-free
    4 carrots, scraped and cut into bite-size pieces
    1 (15.5 oz.) can dark red kidney beans, rinsed and drained
    1/2 medium-size cabbage, cut into bite-size chunks
    1 heaping Tbsp. dry dill weed
    1 (6 oz.) can tomato paste, No-salt Added
    1 (15 oz. can, about 1.75 cups) sliced beets, cut julienned or cubes, drained and rinsed

Directions

In an 8-qt. stock pot add the broth. Clean and prepare your vegetables. Drain and rinse the kidney beans. Add all the ingredients to the pot, including the dill weed and tomatoe paste. Bring to a slight boil and lower the heat to medium. Cook until carrots begin to soften, and then lower to a simmer; cover slightly and continue to simmer for about 30 minutes.

Serve with a dollop of light sour cream, if desired. Makes about 12 one-cup servings
