Introduction
This is a great alternative to a traditional pasta salad. I estimated on amounts and serving size, as I tend to not measure and use a heavy hand with veggies additions. Ingredients

1 Box Near East Pearled Couscous Roasted Garlic & Olive Oil
3 Cup Chopped Fresh Spinach
15 raw chopped Baby Carrots
1/2 cup choped Green Onion
1 1/2 cup chopped English Cucumber, peel on
1 chopped Roma Tomato
3 Tbs. Wishbone Light Italian Dressing
3 Tbs. Lite Creamy Ranch Dressing
4 oz. Low Fat Feta Cheese
Garlic Sea Salt (grinder)
Ground Black Pepper
Directions
Simply chop all veggies and prepare couscous according to directions. Stir together.
I usually chop vegetables while couscous is cooking, thus cutting overall time to about 15 minutes. I like this particular salad chilled, so I sometimes set in the fridge for a bit before serving. Salad looks great in a big white bowl.
