Perfect high energy food for before or after the gym!
Number of Servings: 16
Ingredients

2 cups of almond flour
4 cups of rolled oats
1 tsp of baking soda
1 tsp of baking powder
0.5 cups of coconut milk
1 granny smith apple, diced
1 cup of spinach leaves
1 cup of unsweetened shredded coconut
1 cup of dried apricot halves, chopped
1 cup of freeze dried cranberries
Directions
Preheat oven to 350 degrees F
Mix flour, oats, baking soda, and baking powder in a large bowl. Pinch of salt optional. Set aside.
In a food processor, puree spinach and apple until well blended. Pour into bowl and mix in coconut milk and shredded coconut. At this point, you can optionally add up to 1/2 cup of brown sugar.
Add wet ingredients to dry ingredients and mix until blended. Add whatever dried fruit or nuts you desire.
Pour into a lightly greased 9x13 baking dish. Bake for 30 to 40 minutes, or until the top is browned and firm to the touch.
