Ingredients

    2 cups whole-wheat flour
    3/4 cup splenda
    1/4 cup packed brown sugar
    2 teaspoons baking powder
    2 teaspoons instant coffee granules
    1 teaspoon ground cinnamon
    1/4 teaspoon salt
    1 egg
    1 cup 1% milk
    1/2 cup butter, melted
    1 teaspoon vanilla extract
    1 cup dark chocolate pieces

Directions

1. Preheat oven to 375; grease or paper line a 12 cup muffin tray.

2. In a large mixing bowl, combine the flour, sugars, baking powder, coffee granules, cinnamon and salt.

3. Whisk the egg, milk, butter and vanilla; stir into dry ingredients just until moistened.
*Be careful adding hot melted butter to egg - egg with start to coagulate. If you just melted the butter, add the butter first to the dry mix, then the egg/milk/vanilla mixture.

4. Fold in chocolate chips (I used 12 pieces of Dove's Dark chocolate hearts, chopped up). Fill greased or paper-lined muffin cups three-fourths full.

    Incredible!
    My family loves these. I use 3/4 cup of granulated sugar, but 1/2 cup would be lots, and 3/4 cup choco chips. I love that you use all whole wheat flour. I do stir the flour before measuring to "fluff" it a bit so I use a bit less, making a lighter muffin. Also, I use 2 Tbsp coffee, not 2 tsp. - 9/3/16

    Yummy muffins. I used 1/4 cup stevia-sugar blend, 1/4 cup liquid egg, skim milk and 1/2 cup I Can't Believe It's Not Butter. - 8/26/12
