Introduction

Ingredients

2 Tbs - sesame oil (or olive oil)
1.5 c - broccoli florets
1.5 c - sliced carrots
1.5 c - sugar snap or snow peas
1/2 block - extra firm tofu, cubed
2 - spring (green) onions, sliced thinly
1/4 c - Kikkoman Thai Yellow Curry Sauce (any flavored sauce could be substituted here)
1 c - brown rice (cooked according to directions)
a handful of chopped cilantro if desired
Directions
Make rice according to package directions. (I use convetional long-cooking rice, hence the 45 minute cooking time)
Heat sesame oil in skillet or wok. Add veggies, sautee for 2 minutes, then add 2 Tbs of water and cover and let steam for 4-5 minutes (or until desired doneness). Uncover, add tofu and green onions and stir fry for an additional 2-3 minutes. Add yellow curry sauce and let heat through. Serve 1/4 of the stir-fry mixture over 1/4 of the rice. Voila! Garnish with cilantro if desired.
This make a good base for lots of other variations. If you like your cuisine on the spicier side, add red pepper flakes or chili sauce.
