Ingredients

    1 Cup, Cottage Cheese (2%)
    1 Can, Garbanzo Beans (14.5 oz)
    1 Cup, Carrots, grated
    1/4 Cup, Green Peppers, Chopped
    1/4 Cup, Red Peppers, Chopped
    1/4 Cup, Yellow Peppers, Chopped
    2 Tbsp, Red Onions, Chopped
    1 Tsp, Salt
    Pepper to taste
    2 Tbsp, Parsley, Chopped
    1 Tsp, Garlic, minced or crushed
    1 Cup, Cucumber (with peel), seeded and sliced

Directions

Mix all ingredients and allow to refrigerate over-night before serving.
