Introduction

One of my goals is to make this recipe lower in sodium. I think the sodium culprits are the tomato sauce, the cheeses, and the canned artichoke hearts. Expect some revamping. Ingredients

    Marinara:
    2 cans tomato sauce
    1 small onion, finely chopped
    2 cloves garlic, sliced or 1 tablespoon dried garlic slices
    1 tsp Thyme, dried
    1 tsp Oregano, dried
    1 tsp Rosemary, dried
    2 tsp Olive Oil

    Filling:
    1 jar artichokes, liquid drained
    2 cups spinach
    1 cup chopped fresh basil
    1/2 cup Parmesan
    2 cups mozzarella

    Lasagna noodles, whole wheat, uncooked

Directions

1. Saute onion and garlic with olive oil.
2. Grind herbs in mortar and pestle.
3. Add ground herbs to onions.
4. Add tomato sauce.
5. Simmer 10-15 minutes.
6. In medium bowl, combine artichoke hearts, spinach, and basil.
7. Grate cheeses into a small bowl, and mix.
8. In a 9"x9" square dish, add a layer of marinara.
9. Add a layer of noodles.
10. Add a layer of spinach/artichoke/basil.
11. Add a layer of cheese.
12. Add marinara-noodles-spinach-cheese layers one more time.
13. Add marinara, noodles, cheese layers.

Bake at 350 degrees for 1 hour. Let cool 10-15 minutes.
