Ingredients

    Ingredients:
    Ground beef, extra lean, 4 oz (cooked, drained & crumbled)
    Beans, red kidney, 1.5 cup (most canned beans work well)
    Petite Cut Diced Tomatoes, 1.5 cup (1 can)
    Green Peppers (red, yellow, orange), 0.5 cup, chopped
    Celery, raw, .5 cup, diced
    Onions, raw, .5 cup, chopped
    Black Olives, 4 jumbo (chopped)
    Low Sodium Taco Seasoning, 1 package

Directions

I cook my ground beef in a plastic colander over a bowl in the microwave to eliminate the grease, or I'll use leftover burger, chicken or omit the meat if you'd prefer vegetarian. Mix all in one pan on the stove, microwave or crockpot and simmer until hot. It looks and tastes great with a little grated cheese, a couple of tortilla chips broken over the top and a dollop of fat free sour cream.
