Ingredients

    1 tbsp olive oil
    1 medium onion
    8 oz whites slice mushrooms
    4 oz assorted wild (crimini) mushrooms
    1 c shredded carrots
    1 garlic clove (minced)
    1/4 tsp dried thyme
    4 cups beef broth
    3/4 c quick cooking brown rice
    1 1/2 cup black beans

Directions

place oil in pan and saute veggies ... add broth and rice and cook until rice is done
