Introduction

Number of Servings: 4

Ingredients

    1t olive oil
    1 medium onion, diced
    1/2 C diced sweet red pepper
    2-3 cloves garlic, minced
    2 zucchini, sliced
    1 1/4 C corn, scraped fresh off the cob, if possible
    1/2 t basil
    1t seasoned salt (optional)
    1C tomato sauce
    1 to 1 1/2 C grated cheese or vegan substitute
    Parsley for garnish

Directions

Sauté onion, pepper and garlic in oil until onion is transparent. Add zucchini, basil and salt, if using. Cook and stir over medium-high heat until squash is half cooked. Add corn, tomato sauce and cheese or cheese substitute, stirring until creamy. Garnish with a little fresh parsley. Makes 4 half-cup servings.

*Note: I use frozen corn when fresh isn't available (it's not the same but it's still tasty) and add the sweet pepper at the end with the corn for extra sweetness and texture.
