Ingredients

3/4 cup dry whole wheat couscous
1 cup boiling water
2 green onions, finely chopped, including tops
1/2 cup red bell pepper, seeded and thiny sliced
1 carrot, grated
1 cup red cabbage, thinly shredded
1/4 cup parsley, finely chopped
lemon juice from 1/2 lemon
2 T rice vinegar
1/2 T olive oil
1/2 T curry powder
3/4 t salt
Directions
Boil 1 cup water and add couscous. Stir to mix, then cover and let stand until all the water has been absorbed. 5-10 minutes. Fluff with fork.
In a large bowl add green onions, bell pepper, carrot, cabbage, parsley and couscous.
In a small bowl, combine lemon juice, vinegar, olive oil, curry powder and salt. Add to salad and toss to mix.
Serve at room temperature or chilled.
