Introduction

This is my take on a Laura Calder's Cream of Lentil Soup with Chorizo Croutes from French Food at Home. This is my take on a Laura Calder's Cream of Lentil Soup with Chorizo Croutes from French Food at Home.
Number of Servings: 4

Ingredients

    1 cup green lentils
    1 carrot chopped
    1 onion chopped
    1 bay leaf
    1 sprig of thyme
    4 cup or chicken stock or water or both mixed
    salt and pepper to taste
    4 oz soyrizo
    3 tsp olive olive

Directions

-soak lentils in cold water for 2 hours
-simmer lentils, carrot, onion, bay leaf, thyme, in 4 cups of chicken stock or water. until lentils are mushy. 45-90mins
-blend soup in a blender. (do 1 cup at a time to aviod cracking blender and making a mess)
-slowly reheat soup add salt and pepper to taste
-heat olive oil and add soyrizo cook for a few mins, then mix in with the rest of the soup.

Serving Size: 4-6
