Ingredients

* Golden Potatoes, 1.5 Lb
* Onion Flakes dried 1/4 cup
* Bacon- Reduced Sodium 5 Slices
* Kraft Velveeta reduced fat with 2% milk, 8 oz cut into 1 inch pieces
* Cut Green Beans - No Salt, 1 can
* 2% sharp cheddar cheese reduced fat shreded, 0.50 cup
Directions
Preheat oven to 350
Cut the potatoes into two inch cubes. In a large pot, boil the potatoes until al dente. While the potatoes are boiling, cook the bacon in a pan just until crunchy. Remove bacon and place on a paper towel.
Drain the potatoes and return to the pot. Add the Velveeta to the potatoes to melt. Smash the mixture to desired consistency.
Spray a 9x9 baking dish with non-stick cooking spray (butter flavor works great). Place half the smashed potatoes in the bottom of the baking dish, then top with the green beans and crumbled bacon and cover with the remaining potatoes. Top with tomatoes, shredded cheese and rice crispies.
Bake uncovered for 10-15 minutes until golden and bubbly. Makes 8 servings.
