Ingredients

    Channel Catfish, 4 fillet
    Kraft Light Done Right Ranch Salad Dressing, 2 tbsp
    *Egg white, 2 serving
    Yellow Cornmeal, .375 cup
    Kraft 100% Grated Parmesan Cheese, 12 tsp
    *Wheat flour, white, all-purpose, unenriched, .125 cup
    Pepper, red or cayenne, .25 tsp
    Mixed Vegetables, frozen, 1 package (10 oz)
    Counrty Crock Light, 2 tbsp

Directions

Preheat oven to 425 degrees.
Combine dressing & egg whites in a small bowl, & stir well with a whisk. Combine cornmeal, cheese, flour, pepper, & salt in a shallow dish. Dip fish in egg white mixture, dredge in cornmeal mixture.
Place fish on a baking sheet coated with cooking spray; bake at 425 degrees for 12 minutes on each side or until lightly browned & fish flakes easily when tested with a fork.
