Number of Servings: 4

Ingredients

    4 medium sized potatoes, peeled (cut in wedges)
    1/2 lb lean ground beef
    1/2 green bell pepper
    1/2 small onion chopped
    1/2 cup tomato sauce
    1/4 cup sliced green olives
    1/4 cup raisins
    1/4 tsp paprika
    1/2 tsp garlic powder
    1 egg, beaten
    1/2 cup seasoned bread crumbs
    salt
    pepper

Directions

Place potatoes in a large sauce pan and cover with water. Bring to a boil. Reduce heat to low, COVER, and cook for 15-20 minutes until tender.
Meanwhile in a large skillet, cook the beef, green pepper and onion over medium heat until meat is no longer pink; drain. Stir in the tomato sauce, olives, raisins, 1/8 tsp. salt, 1/8 tsp. pepper, and paprika; heat through.
Drain potatoes; mash with garlic powder, 1/2 tsp salt and 1/2 tsp pepper.
Shape 2 tbsp of the potatoes into a thin patty in your hand. Place a heaping tablespoonful of the cooled filling into the center of the patty. shape the potato patty around the meat filling, forming a ball. set aside and repeat (makes 12 balls).
Place egg and breadcrumbs into two separate shallow bowls. Dip potato balls into the egg then roll in bread crumbs.
Place the Papas Rellenas onto a greased baking sheet and bake at 450 degrees F for 20 minutes until golden brown.

Serve with black beans and a fresh salad.
