Ingredients
* Broccoli, fresh, 2 cup, chopped
* Butter, salted, 2 tbsp
* Onions, raw, 2 tbsp chopped
* *Flour, white, .1250 cup (2 tbsp)
* Pepper, black, 1 dash
* Nutmeg, ground, .20 tsp (i/8 tsp)
* Salt, .50 tsp
* Light Cream (coffee cream or table cream), 1.5 cup
* Cheddar Cheese, 1.5 cup, shredded
* Egg, fresh, 3 large beaten
Directions
Hat oven to 350
Grease a 2.5 quart casserole. Arrange the cooked broccoli at the bottom.
Haet butter in a skillet. Add onion and cook 2-3 min. Stir in flour until well blended and cook for 1 min. Add pepper, nutmeg, salt and light cream. Continue cooking over low heat until thickened. Stir in cheese and cook until melted. Add one third of the hot mixture to the beaten eggs and stir . Add back to hot mixture on stove, blending well. Pour over the brocolli and bake for 35 - 45 min, until a knife inserted in center comes clean. Let stand for 10 minutes.
