Ingredients

2 cups wheat berries
1 -10.75 oz can cream of mushroom soup
1 - 14 oz can vegetable broth
1 cup diced potatos
1/2 cup diced carrots
1/2 cup diced bell pepper
1/2 cup diced onions
1 TBSP parsley
3 cloves garlic, chopped
1 TBSP cilantro
1 1b of skinless boneless chicken breast
1 cup lowfat cheddar or colby cheese
Directions
Preheat oven to 350 degrees
Mix wheat berries, cream of mushroom soup and vegetable broth in a 13X9 casserole dish.
Spray frying pan with cooking spray.
Chop chicken and fry in pan. Add onions cook cook until onions are transparent. Add potatos, carrots, bell peppers, parsley, garlic, and cilantro. Pour chicken mix into casserole dish with wheat berry mix. Top with cheese and cover with foil.
Bake for 1 - 1.5 hours until wheat berries are soft.
Enjoy.
