Introduction

Basically I took random things I had in the fridge and pantry and made this. But it turned out really yummy!

I served this with 1 cup dry brown rice simmered with 1.5 cups water and .5 cup "juice" from a can of diced tomatoes (holding back chunks). I then added a cup of the diced tomatoes after simmering the rice for 40 minutes and added salt, pepper, cayenne pepper, granulated garlic and Pampered chef southwest seasoning.

Ingredients

    Garlic, 3 cloves
    Shallots, 1 purple, large, chopped
    Olive Oil, 3 tbsp
    Carrots, raw, 1 cup, chopped
    Peppers, sweet, red, raw, sliced, 2/3 cup
    Beans, black, 1 small can
    Spinach, fresh, 1.5 cups
    Pepper, Cayenne, Dashes to taste
    Pampered Chef - Southwestern Seasoning Mix, several dashes, to taste
    Salt, 2 dashes
    Pepper, black, 2 dashes
    Canned Diced Tomatoes, No Salt Added, 2/3 cup

Directions

Chop finely garlic and large purple shallot. Preheat pan to medium high, add olive oil once hot. Once oil is heated, add garlic and then shallots. Saute for a bit, chopping carrots and red peppers. Add carrots and saute for a few minutes. Then add red peppers. Continue to cook, then add black beans. Once beans are heated through, add diced tomatoes. Once tomatoes are heated add spinach, a few handfulls at a time, folding in until cooked. Add seasonings at the end and voila! Healthy, hearty, and vegan, what's for dinner.
